Recipe for Jun's soto ayam

The second recipe we are sharing with you is

Jun's soto ayam (Indonesian chicken soup)

INGREDIENTS

 

Pasta

- 1 chopped onion

- 4 cloves of garlic, minced

- 3 cm ginger

- 4 candlenuts

 

- 750 ml water

- 1 stalk lemongrass, bruised

- 4 kaffir lime leaves

- 1 chicken leg

- 3 celery stalks, sliced

- 10 cm leek, sliced

- a little lovage (if available)

- teaspoon of turmeric (turmeric powder)

- salt and pepper

 

Garnish

- boiled egg (1/2 per person)

- a little finely chopped leek (white)

- fried onions (bawang goreng)

 

PREPARATION

1 Finely chop the onion, garlic, ginger, and candlenut in a blender.

2 Put the pasta in a pan and add 750 ml of water.

3 Add the chicken leg and the remaining ingredients.

4 Bring to a boil and simmer.

5 Remove the chicken leg from the pan and pull the meat off the bone. Cut the meat into small pieces.

6 Strain the soup.

7 Add the chicken meat.

8 Heat the soup.

9 Add salt and pepper.

 

Serve in soup bowls and add a half-boiled egg.

Garnish with some finely chopped white leek and fried shallots.
